Most suburbs get a new restaurant when a national chain signs a lease. Western Springs is different this year. The four biggest changes on the village dining calendar all trace back to operators who already run something here, or to chefs and groups with a track record five towns over. If it feels like the same names keep surfacing on liquor license agendas, that's because they are.
Here is what has actually shifted in 2026, block by block, and why the pattern matters more than any single opening.
The Burlington Avenue reshuffle
The clearest example is 821 Burlington. Salerno's Pizzeria closed there in early January, and by summer the space had a successor lined up. Alano Ristorante is planned for the space at 821 Burlington Ave., where Salerno's Pizzeria closed in early January, with owner Chris Elsey hoping to open in late October. Elsey is not new to the block. He also owns the Hillgrove Tap locations in Western Springs and Tinley Park. His background reads like a shortlist for a suburban Italian concept: he was formerly the managing partner of Francesca's restaurants, a chain with locations in Elmhurst, Naperville and other suburbs.
The Alano application describes an "elegant Italian restaurant" with an estimated price per person of $30 to $45 based on alcoholic beverages, offering appetizers, salads, pastas, pizza, fish, chicken and steaks. That price band is meaningful. It sits above Hillgrove Tap's pub check average and below the tasting-menu tier, filling a gap on Burlington that had been sitting open since Salerno's left.
A few blocks north on the same street, Chef Paul Virant has been running his French concept for two full years now. Petite Vie opened at 909 Burlington Ave., where Hash Stacks Café & Market had operated before closing in November 2022. Virant's operating footprint outside the village adds context to what Western Springs is getting for the price: he has the same role for Vistro Prime steakhouse in Hinsdale and Gaijin, a Japanese restaurant in Chicago.
So within a short walk on Burlington, two seasoned multi-concept operators now run three restaurants at three different price points. That is unusual for a village this size.
The Lawn Avenue anchor changed hands
The other headline is 4471 Lawn Ave. That address had been Vie for nearly two decades until its 2023 closure, and the successor is now open. Ella's Italian Pub took over the space and, per the reporting at the time of the license hearing, is part of a group of Ella's and Gia Mia restaurants in Elmhurst, Downers Grove, Wheaton, Geneva and Naperville.
Read those city names together and a picture forms. Western Springs is now the smallest market in a west-suburban Italian portfolio that reaches from Geneva to Naperville. The Gia Mia group did not test the concept somewhere sleepier first. They put it in the old Vie address, on the theory that the room and the neighborhood had trained diners to expect a certain kind of evening there. That's a bet on the block, not on the sign.
Garden Market gets a fast-casual
The third shift is at the Mariano's plaza. A Mexican restaurant is set to open in the spring at the Garden Market shopping center at 4700 Gilbert Ave., which includes Mariano's grocery store, and the Western Springs location would be the fast-casual chain Taco Maya's 12th. The chain's own framing is "authentic Mexican meets global fusion."
Taco Maya is doing something the Burlington operators are not: chasing the grocery-run daypart. Anyone who has waited five minutes for a Mariano's parking spot on a Saturday morning knows how much traffic 4700 Gilbert generates. Putting a fast-casual there is a different bet than putting a dinner house on Burlington. Both bets can be right.

Two names, Elsey and Virant, account for three of the six lines. That is the story most residents will not have pieced together from any single Patch headline.
Why Tower Green does what a restaurant row does elsewhere
Villages that lack a long dining strip usually solve for it with a public space that concentrates evening foot traffic. Western Springs has one, and it runs on a schedule most residents already know by heart. The weekly French Market takes place on Wednesdays in front of the Tower Green on Hillgrove Avenue between 4 and 7 pm. That is the same three-hour window when Hillgrove Tap fills its bar and Petite Vie starts its dinner service, which is not an accident.
The market ties into the summer's larger event as well. Gathering on the Green returns to Tower Green in downtown Western Springs for an evening of live music, local food, family activities, pony rides, a petting zoo, balloon twisting, face painting, bounce houses, inflatable games, carnival rides, and activities for kids of all ages, and is a longtime Western Springs tradition. If you moved here recently, that is the night to buy a wristband and walk over rather than drive.
Tower Green is doing the aggregation work a downtown strip does in La Grange or Hinsdale. The restaurants are the beneficiaries, not the driver.
A weeknight loop that uses all of it
For anyone trying to string these pieces together on an ordinary Wednesday between May and September, the sequence roughly works like this:
- 4:00 to 5:30 pm at the French Market on Hillgrove for produce, a snack, and whatever local vendors have brought that week
- 5:30 to 6:00 pm walk down Burlington past the Alano storefront if you want to see the buildout, past Hillgrove Tap if the patio is your speed
- 6:00 pm dinner at Petite Vie for the brasserie menu, or Hillgrove Tap if the kids are in tow, or drive over to Ella's on Lawn Ave for the Italian pub end of the spectrum
- After dinner, back to Tower Green if there is programming on the calendar
The loop is short on purpose. That's the point. Western Springs does not have twenty restaurants. It has a small, curated set run by people who have been doing this in the western suburbs for a long time, arranged inside a fifteen-minute walking radius of a public green.
What to watch for the rest of the year
Two things worth tracking before the fall. First, the Alano opening. Elsey's application signaled late October, and any Italian dinner house at that price point will affect how Petite Vie and Ella's position their menus once holiday reservations start filling in. Second, the sequencing of the Taco Maya opening at Garden Market against the school-year weeknight schedule, which is a very different demand pattern than summer market Wednesdays.
Between Elsey on Burlington, Virant on Burlington, the Gia Mia group on Lawn, and a fast-casual moving in at Gilbert, Western Springs in 2026 is not adding restaurants at random. It is adding operators with existing playbooks, in specific spaces, timed to a village calendar most residents already keep.
